I agree. In the early days, when consoles and computers lacked "power", the game designers had to focus on the gameplay instead, but today it's all about the graphics and the more complicated control the better it seems.
It's getting harder and harder for me to find new games which I actually care to play.
ATM I don't play that much, mainly because I'm now running linux and still has to acquaint my self with it all.
My favorite games:
Armagetron Advanced
Transport Tycoon/Open TTD
Heroes of might and magic III (maybe also V, haven't decided yet.)
Entropia Universe (formerly known as Project Entropia)
Various versions of Need For Speed.
The game where two gorillas throws explosive bananas after each others

and so on...
Most of all i like games where mouse sensitivity is not relevant. The "mouse" is, IMHO, the worst invention ever, thus I hate most games where the mouse is used a lot.
Edit:
I am unable to vote at it would have to be a combination of the pc and console. I like the idea of a computer designed for gaming, but I often hate the controls. (Allthough the WII control has it's bright sides.)
This was supposed to be a cool signature...
